What it's all about is basically trying to preserve as much of the goodness naturally found in the cocoa bean as possible when it comes to making chocolate. The amazing thing is that the raw (unroasted) cocoa bean is an extremely nutritious food and that all chocolate is made from these special beans. The problem is that chocolate making is a very industrial process - one that normally involves lots of heat and the addition of ingredients that aren't top of the healthy food charts. So, to put it simply, the high temperatures and methods of processing in conventional chocolate tend to destroy the most nutritious aspects of that nourishing cocoa bean, in particular the flavanols that are responsible for chocolate's powerful antioxidant effect.

Nothing dodgy
Another key feature of the chocolate on this site is the noteable absence of refined sugar. Refined (white) sugar is a staple ingredient in most conventional chocolate and contributes to it's infamous reputation as a junk food. We're keen to reverse this notion - we believe that chocolate offers a very valuable source of many nutrients and is a very nourishing food.
